Technology of preparation of a difficult garnish

Cooking complex side dishes: technology

In this case, you need to choose products so that they harmonize to taste and complement each other. It is also important to beautifully lay out all kinds of side dishes on one plate so that they become an appetizing composition.

Let us give an example of a side dish that includes boiled potatoes, cauliflower fried in batter and vegetable stew. Let's start cooking:

  1. Peeled potatoes cut into large slices.
  2. Fill with water and boil over medium heat.
  3. Boil until cooked. In the process of cooking do not forget to salt to taste.
  4. Make sure that the pieces are not digested, they should not turn into porridge.
  5. When the potatoes are boiled, drain the water, add the butter, chopped dill and mix.

Leave the hot potatoes under the lid closed. In the meantime, prepare the next component of the side dish.

Cauliflower and vegetables

Let's start with cooking cabbage:

  1. Wash it and disassemble into inflorescences. Boil in salted water for no more than 4 minutes - it should remain dense and not fall apart.
  2. In a bowl, shake the eggs. Put the same cabbage and mix well. Optionally, you can pepper a little.
  3. Roll each inflorescence in breadcrumbs and place in a frying pan with hot oil. Fry for 5-7 minutes.

The second part of the garnish is ready, let's proceed to the vegetable stew:

  1. Carrot grate on a coarse grater. Chop the onion.
  2. Slice the Bulgarian pepper into straws and tomatoes into small pieces.
  3. Put onions on a preheated pan with butter, fry a little, add carrots to the same place.
  4. After 2-3 minutes, put the pepper and tomatoes. Cook, stirring constantly. Salt, pepper.
  5. Add 50 ml of water or broth, cover and simmer on low heat for 15 minutes.After turning off the fire, you can add chopped greens and let it brew for 5 minutes.

Of these three options, potatoes are served hot, the other two dishes can be eaten warm or completely cooled. Therefore, it is better to start cooking all the same with them.

Put each dish in the form of neat slides on a large flat plate in small portions. This option is suitable for meat, chicken or fish. You can always add an extra piece to any complex side dish - canned peas or corn. Instead of potatoes, you can use rice or pasta.
