For 6 servings:

Talchtelle 750 g;

boiled prosciutto ham cut into thin slices and cut into strips 5 mm wide 150 g;

salt;

butter 125 g;

"Parmesan", grated on a fine grater 60 g;

freshly ground black pepper;

Pour water into a saucepan, add salt, bring to a boil and add tagliatelle. While the pasta is boiling, put the butter in a small frying pan and put it on a very slow fire. As soon as the butter begins to melt, put strips of prosciutto in it: the ham should only warm up, but not fry.

When the tagliatelle is ready, lay them down in a colander, drain and transfer to a warm serving dish. Sprinkle with grated “Parmesan” on top, pepper well, add slices of ham and serve.
