How to make a tandoor do it yourself

What is a tandoor, and what can be cooked in it?

Tandoor is a relatively small, but very multifunctional oven of a spherical appearance. This structure can be found in almost every yard in Central Asia. Cooked in tandyr dishes have an amazing taste due to its unusual design.

Due to the special structure of the furnace, it can be heated to strong heat with a small bundle of brushwood. The oven remains hot for a long time, which allows you to cook a large number of products, so the tandoor is considered a very economical device for baking and roasting.

In addition to the well-known fragrant cakes of various kinds, the tandoor bakes:

  • vegetables,
  • meat,
  • a bird

In the oven you can get both kebabs and simply baked meat, and some dishes can be cooked at the same time.

Tandyr design

The design of the tandoor is simple, so you can make such a furnace on your own site on your own even without special skills and tools.Usually, the furnace is placed on an open area of the yard on a special foundation, which is formed 150-170 mm above the soil level and is just as deep.

A blower chamber with a door is arranged above the foundation, and a cast-iron grating is placed on top of it. On the foundation, an internal tandoor chamber is erected from a brick, tapering upwards and forming a dome shape. The inner surfaces of the chamber are well smoothed with a layer of clay. It is to this surface that raw flat cakes of dough stick, which after baking become fragrant bread.

The tandoor can be of different sizes, but it is traditionally made 1-1.5 m high and about 1 m in diameter. But for giving, if it is not considered as the only place for cooking, you can equip a stove of a more modest size.

In the upper part of the tandoor, the inner chamber is narrowed, and a heat-saving material is placed in a special gap between it and the outer walls. As a rule, for this they take small pebbles, small fractional clay, sand or salt. This layer helps keep the temperature necessary for baking in the tandoor for a long time after the fuel burns out.

Due to the spherical shape of the tandoor and the materials from which it is made, the heat from the heated walls is not outward, but inside the furnace. Therefore, even after the coals have been removed, the accumulated heat is stored sufficiently so that any products are completely roasted or fried.

Tandoor can be made in two ways: with the erection of the furnace on the finished clay inset or with the formation of a thick clay layer on the inner walls of brick.

Clay tab is sold in finished form and has the shape of a jug without a bottom. If there is an opportunity to acquire this form, then the process of manufacturing the tandoor will be significantly simplified and executed much faster.

How to make a tandoor with a clay tab with your own hands

The clay tab can be made independently, but it should be understood that this is not an easy job, and you may have to start over and over again and again. If you have never done anything like this, the first time, most likely, it will not work even with the most diligent effort.

How to make a tandyr tab

To create a tandyr clay inlay, not any raw material is needed, you need to get medium-viscosity chamotte clay, which has good plasticity.For the manufacture of this furnace molding mixture consists of the following components:

  • salt,
  • clay,
  • sand,
  • wool.

These components need to be taken in a ratio of 1: 4: 1: 2. Sheep or camel wool is added to the solution, this is necessary to ensure thermal insulation, additionally it serves as a reinforcing element for the clay product being formed.

Chamotte clay itself must be cleaned from impurities. In order to completely remove pebbles and plant parts from it, it is rubbed through the net. After that, it is stirred and soaked for 1-2 days.

After a time, the solution is thoroughly mixed to a uniform dough. Usually this process is performed with the feet - the mixture is trampled down for quite a long time.

The clay tab of the tandoor is made in a special way that differs from the classic pottery process. This method of creating a bowl is called tape, because from a solution of clay you need to roll out strips 15-20 mm thick, 200-250 mm wide and 2000 mm long. This should be done in the shade, under the roof of the canopy, since the clay will dry out and lose elasticity in the sun.

Prepared clay strips are carried to a sunny place, where they form a bowl without bottom - the lower part of the furnace. The bowl should be in the form of a ring with smooth walls.At the first stage it is allowed to use a metal barrel as a frame, but after forming the lower part, it should be removed immediately. To easily leave the barrel of clay, the metal surface must first be oiled with vegetable oil.

  1. At the bottom of the bowl, fasten one or two lanes, which will create a part of the jug with rounded sides, tapering upwards and resembling a dome, but without the top neck.
  2. After this comes the turn of sealing the walls with the help of two special tools. It is better to use wooden ones, but you can also use metal special trowels with smooth rounded edges in the shape of a disk, as well as a wooden spatula with embossed diagonal stripes.
  3. With one hand you need to hold the trowel and press it to the inner surface of the earthen jar, and from the outside, through the wall, you need to gently knock on the trowel with a spatula. During this process, the clay is compacted, a pattern in the form of diagonal stripes appears on it.
  4. Further, the upper part of the bowl with the neck is created in a similar way, its diameter should be two times smaller than the bottom of the insert.In the upper part of the jug, the clay is leveled and compacted in the same way as on the lower and middle parts.
  5. After the bowl is fully formed, the clay insert should be left to dry in a sunny place. At this time, proceed to the arrangement of the foundation for the installation of tandoor.

How to make a foundation for tandyr

If the tandoor is supposed to be made with a finished tab, then the foundation for it can be arranged in both square and round shape. Similarly, in the construction of brick walls - they need to lay out on a square or in a circle. The first option is preferable, since a sufficiently large gap is formed between the external walls and the clay inset, which must be filled with heat-accumulating and heat-insulating components.

It is necessary that the size of the sides or diameter of the foundation be 120-150 mm larger than the bottom part of the external brick walls of the tandoor. Under the foundation you should not dig too deep a ditch, it is enough to clean 120-170 mm of soil. The dug trench is covered with a layer of sand 50 mm thick and carefully tamped.

Then there are two options: immediately lay the reinforcing mesh or first pour a layer of crushed stone of the middle fraction, and already on it - the reinforcement.The second option is more preferable, as it will make the foundation stronger - crushed stone mixed with mortar forms an additional reinforcing layer.

It is desirable to raise the foundation above the ground, this will eliminate the risk of washing the masonry with rain flows. To raise the foundation, make formwork with a height of 100-150 mm.

Knead the concrete solution from sand, gravel and cement and pour it into the formwork. Smooth the mortar with a rule, checking the flatness of the surface at the building level

How to lay the walls of the tandoor

After drying and the strength of the concrete, measure the planned distance of 120�150 mm inwards from the edges of the resulting slab, and draw the outer edges of the walls of the stove.

Use these lines to build the first row of walls on which you want to form the channel of the blow chamber. Install the blower door on the first or second row of the chamber walls.

Instead of the door, you can insert a metal pipe into the brickwork, but you will also have to install a valve in it with the ability to control the amount of incoming air.

Sometimes in the tandoor they refuse from the blowing chamber, it is possible to burn firewood at the bottom of the furnace, but it will be inconvenient to clean it from the combustion products.If the camera is made, then a cast-iron grate is placed on top of it, where firewood is burned. Ash falls into the ash pit, from where it can be removed through the door.

Lattice is better to buy ready-made cast iron in the store. You can find rectangular and round options that are easy to match the diameter of the tandoor. Tandyr tab neatly installed on the platform on top of the grill, and the joint is coated with clay mortar.

Brick walls are erected around the tab to its neck, and the gaps between brick and clay walls are filled with heat-accumulating materials.

In the next stage, the top of the furnace, except the central round hole, is covered with brickwork. For the hole you can buy or make a wooden cover that tightly closes the neck.

Before operating the furnace, it is heated for a few days to moderately so that the drying of the masonry takes place gradually and evenly. After complete drying of all materials, you can proceed to the use of tandoor and cooking.
